Ingredients
- 300g spaghetti noodles
Peanut Butter Dressing
- 1/2 cup Happy Jars unsweetened creamy peanut butter
- 1 tbsp lemon juice
- 1/2 tbsp soy sauce
- 1/2 tbsp sesame oil
- 1/2 tsp minced garlic
- 1 1/2 tsp red chilli flakes
- 6 tbsp water
- 2 tbsp honey
Toppings
- Purple cabbage finely diced
- Carrot finely diced
- Red capsicum finely diced
- Yellow capsicum finely diced
- Spring onions finely chopped
- Roasted peanuts
- Boil the noodles as per instructions on the pack. Set aside.
- In a mixer, add all the ingredients listed under 'Peanut butter dressing' - peanut butter, lemon juice, soy sauce, sesame oil, minced garlic, chilli flakes, honey and water. Blend until you have a smooth, consistent sauce texture.
- Pour over the noodles and toss with the veggies of your choice.
- Sprinkle some peanuts and finely chopped spring onions and serve cold.
