  • 300g spaghetti noodles
Peanut Butter Dressing
  • 1/2 cup Happy Jars unsweetened creamy peanut butter
  • 1 tbsp lemon juice
  • 1/2 tbsp soy sauce
  • 1/2 tbsp sesame oil
  • 1/2 tsp minced garlic
  • 1 1/2 tsp red chilli flakes
  • 6 tbsp water
  • 2 tbsp honey
    • Purple cabbage finely diced
    • Carrot finely diced
    • Red capsicum finely diced
    • Yellow capsicum finely diced
    • Spring onions finely chopped
    • Roasted peanuts
    Recipe instructions
    1. Boil the noodles as per instructions on the pack. Set aside.
    2. In a mixer, add all the ingredients listed under 'Peanut butter dressing' - peanut butter, lemon juice, soy sauce, sesame oil, minced garlic, chilli flakes, honey and water. Blend until you have a smooth, consistent sauce texture.
    3. Pour over the noodles and toss with the veggies of your choice.
    4. Sprinkle some peanuts and finely chopped spring onions and serve cold.
